    Title: Easy Jackfruit Tacos

    MMMMM--------------------------FILLING-------------------------------
    20 oz Can young green jackfruit;
    - packed in water or brine,
    - rinsed & drained
    1 1/2 tb Chili powder
    1 ts Ground cumin
    1 ts Dried oregano
    1/2 ts Smoked paprika
    1/4 ts Cayenne
    1 tb Olive oil
    1 md Onion; finely chopped
    3 cl Garlic; minced
    2 c Fresh Tomato Salsa
    Salt
    Black pepper; freshly ground
    8 Taco shells or tortillas

    Romaine lettuce; shredded
    Ripe tomatoes; chopped
    Fresh Tomato Salsa
    Cheesy Sauce -OR-
    Vegan cheddar cheese;
    - shredded
    Vegan sour cream
    Red onion or scallions;
    - chopped
    Jalapenos;
    - fresh or canned;
    - seeded & chopped
    Black olives;
    - pitted & sliced
    Avocado; chopped
    Lime wedges

    If jackfruit is unavailable, you can substitute chopped seitan,
    steamed tempeh, or portobello mushrooms in this recipe. Or you can use
    reconstituted soy curls or TVP.

    Press the moisture from the rinsed & drained jackfruit, then shred or
    chop it and transfer to a bowl. Add the chili powder, cumin, oregano,
    paprika, and cayenne, tossing to coat the jackfruit with the spices,
    or use your hands to rub the spices into the jackfruit. Set aside.

    Heat the olive oil in a large skillet over medium heat. Add the onion
    and garlic and cook until softened, about 5 minutes. Add the
    jackfruit and any remaining seasonings from the bowl. Cook, stirring,
    until the jackfruit browns slightly. Stir in the salsa and season to
    taste with salt & pepper. Simmer, stirring occasionally, until the
    flavors are well infused into the jackfruit, 20 to 30 minutes. Keep
    warm.

    Preheat the oven to 375?F. Wrap the taco shells or tortillas in
    aluminum foil and place in the oven to warm, 2 to 4 minutes.

    To assemble the tacos, spoon about 1/4 cup of the filling into each
    taco shell or tortilla. Top as desired with any combination of
    toppings. Serve immediately.
