Title: Lima Bean Creole

Yield: 6 Servings
10 oz Frozen lima beans (2 pkg)
6 sl Bacon
1/4 c Onion; finely chopped
2 tb Green pepper; chopped
1/2 ts Salt
Pepper; as desired
2 c Tomatoes; cooked or canned
Cook beans as directed on pkg; drain.
Fry bacon; drain on absorbent paper. In 2 tb bacon drippings, brown
onion and green pepper. Crumble bacon. Add browned onion and green
pepper, bacon, seasonings, and tomatoes to beans. Cover and simmer
gently 15 minutes.
Green Bean Creole:
Use frozen cut green beans instead of lima beans.
Eggplant Creole:
Use 1 md eggplant, pared & cubed, instead of beans. Do not cook
eggplant before combining with other ingredients. Increase salt to 1
ts. Cook 15 to 20 minutes, until eggplant is tender.
