Title: Vegan Greek Gyro Sandwiches

Seitan:
1 tb Olive oil
1 1/4 c Yellow onion (1 lg);
- slice thinly
1 sm Bell pepper; sliced thinly
2 cl Garlic;
- up to 3, pressed or minced
8 oz Seitan strips
1/4 ts Liquid smoke
1 tb Fresh oregano;
- finely chopped
1 ts Fresh rosemary; minced
1/8 ts Black pepper; freshly ground
2 tb Lemon juice;
- freshly squeezed
2 ts Tamari or other soy sauce
Gyros:
2 Pita breads; up to 4
Tomato; sliced thinly
Red onion; sliced thinly
Tzatziki sauce
Total time: 30 minutes
Seitan:
Place a saute pan over medium-high heat. Place the oil onion,
pepper, and garlic in the pan and cook for 2 minutes, stirring
frequently. Lower the heat to low, add the remaining ingredients, and
cook for 15 minutes, stirring occasionally. Meanwhile, prepare the
gyro fixings. Warm the pita breads on a skillet or in the oven. To
assemble, stuff your pita with the fixings, add the seitan, and
enjoy. For an authentic Greek experience, smash your plate when
finished.
Tips:
If you do not have fresh herbs available that's OK, just reduce the
amount of herbs called for to 1/3rd and use dried instead.
Store bought seitan isn't cheap and this recipe is addictive. What to
do? Make your own homemade seitan. It's easy!
Serve this authentic Greek gyro recipe, and tzatziki sauce recipe with
homemade French fries. Use tzatziki sauce as a dip for the fries and
prepare to be blown away!
